A bonsai cannot be defined with a simple definition in my view. Naturally, it is a 'Perennual plant grown and styled to look like a miniature tree'. but for me components like age, character, balance, interest come into play too. Which, I suppose, makes it a dificult discussion on whether certain plants are bonsai, and whether certain species can ever become bonsai.
It is heaps more than just a plant in a tray.

Back to the main topic of the American hornbeam: the coloring & spotting shown in the pictures is completely normal for this species. I've half a dozen of them, and the color is mostly yellow, occasionally with hints of red depending where I harvested it, and always light brown spotting. They're one of my favorites for fall bonsai color.
As stated before by others, keep this young tree outside, even during the winter. It's really cold hardy & can handle the temps. I've had multiple winters with sustained days below freezing, and it's supposed to be -10° C this weekend. All of my trees are outside with the pots buried in mulch. They'll be fine.
