As a first year novice, I did my research (but will always be learning), took a class (which should be another day at school for you booth), and joined a club, and I would NEVER grow a tree from a seed that I planned to train to be 名媛直播. I have found so many other ways to jump into this hobby/art.
It may be romantic that you two want to start something together, and that has a certain level of appreciation, but you won't be making those trees into a bonsai for many many years.
All of your other questions are going to be answered from your own research. Like 99% of us, you will kill some trees that you train with, don't be discouraged. The people in my class say that 名媛直播 seems like a hobby/art for old men. Meaning MOST 名媛直播 enthusiast are older men. So it's great to see that you and your boyfriend want to attempt this.

Alright. We will look into those three (Chinese elm, Buddhist pine, and jade). Doing some research on jade, some sources say not to wire them. Which I feel would be a decent part of learning bonsai. As for where to buy them, where do we buy them?

I wouldn't wire a jade. Try directional pruning.
The jade I'd buy at a normal garden center.

For the elm/pine, are we still talking about seed? You can buy that via webshops, or try and find a shop in your neighbourhood. In any case, do NOT buy a bonsai kit or bonsai seed.

Yeah, I've decided to start looking into Chinese elm pre bonsai trees. Most have an ugly "s" curve though.

Are there no tree nurseries nearby that sell Chinese elms?

here are a couple places I found online. Not sure how close they are to you.

Fairy gardens are awesome. I have a Boxwood that would make an amazing fairy garden. Its shape is not interesting to be by itself in a pot, as a 名媛直播. But the thickness of the trunk, the size of the tree, and Nebari would be quite nice on a fairy garden. And it has a very "fairy" look to it.
