Also, Deshojo's stay red, as far as I know. As said, there are numerous varieties and it is pretty hard figuring out which one exactly it is. Still, I do not think it is important. The care guidelines are the same.
i have several deshojo.. they all turn green in summer..
as for care, it doesn't matter at all like Auk said... it's still a maple

you can always cut off one of the 2 branches of the fork and shorten the tree a little bit..
than let it grow for a year (or 2) and than make a new selection..
with the fork you are almost automatically restricted to a broom-styled tree..
also: letting a branch grow freely will provide thickness to the trunk
so if you get new shoots near the bottom of your tree, let the grow.. especially the bottom one..
you want a thicker trunk? let it grow, don't prune, and feed like a beast
