Im of the opinion that its good to have a go and nothing ventured nothing gained! Good luck with your project!

The cutting is still showing growth on the root area, however I am controlling the real trees to see when their leaves start falling off:
1. should I remove it from the water totally as soon as the trees outside have started shedding their leaves?
OR
2. should I wait until the real trees shed all their leaves
OR
3. something else?
The little one is a plant named Eugenia uniflora, Pitangueira in portuguese.
I will grow it to be a bonsai.
I'm also drying some different seeds to try them out later such as the Avocado (Persea americana) and the Papaya (Carica papaya). Although I read it lives about 8 to 10 years, making them not very rewarding as a bonsai some say, well 10 years is a lot of time still I think, I'm going forward!
I'll check back when I have news!
Everything is going well, lots of work and busy schedules, but I keep caring for them everyday.

You cannot grow bonsai from Papaya or Avocado.

Nope.
Eugenia uniflora is suitable. It's going to take many years though.
