Seeds will sprout anytime but for them to live you should follow mother nature pretty closely.

That means plant them outside about the time they fall off the tree, and let them get cold and hot following the seasons. Since most seedlings die, plant a lot. And, put heavy wire mesh over them to keep birds and squirrels from eating.

If you get seeds for species out of your climate pattern, research where they evolved and provide the closest environment to what they expect.

I pulled about 30 seeds off of an elm tree, expecting three or four to sprout. They all did. About half survived five years.

It is possible but not easy and dont produce as healthy plants. As a beginner, stick to the correct season. IE sow in late authum to early winter outdoors. Sprouts in spring to early summer.

If the greenhouse is unheated in winter that can really be beneficial to them. No animals to eat them and no heavy rain to flush them out of the pots. In my climate it is beneficial to put some snow over the pots in late winter. That first strong late winter sun can really heat them up too much too early. Other than that, greenhouse is excellent to them.
