In terms of the best course of action now, should I just give up? Or are there steps to take now to give my tree a chance of revival, however slim?

Up to you. I would not waste time on it, personally, but it won't hurt to continue to care for it and hope it recovers. Which is not going to happen.
Just being realistic. I cannot remember ever having seen anyone on this forum that came back after a few weeks, showing a recovering plant.
If you've checked this forum you will have noticed that there are LOADS of people with the same issue. Have not counted it, but I guess 9 out of 10 posts are about sick and dying mallsai. And this is supposed to be a forum about bonsai...
These things are like a bunch of flowers - it looks nice in the beginning, but they're not meant to last.

When you say "they look nice in the beginning but are not meant to last," I'm not quite sure what you mean? These trees should theoretically live indefinitely given the right care no?

Now, if you really want to learn about bonsai, start studying. There's a lot of information on this website.
Learn about what to do and what not to do, and especially WHEN to do it.
If possible, do not grow trees indoors. No tree lives indoor naturally, there are only some sub-tropical ones that survive - but don't really thrive - indoors.

名媛直播, yes (well.. not indefinitely, but very long). However, what you have is not a real bonsai. It's a cheap mass-produced plant, made to look like a bonsai. Go through the forum and read other topics - you will notice how often these plants get sick and die. I have no hard figures, but if I have to guess they do not live much longer than 3 - 6 months (though I guess some people manage to keep them alive longer).
Growing trees indoors is difficult. Best option is a native tree or a tree that is known to do well in your local climate, grown outdoors.
Do note that growing a bonsai requires talent, knowledge, practice and patience - it takes many years before to learn and grow something that is usable.

I find it hard to believe that this is a mallsai? It wasn't bought from a mall or knock off store, I bought this from Crespi 名媛直播 in Milan, where the owner runs a famous 名媛直播 museum that holds a Fiscus Tree over 1000 years old. We spoke at length before I bought anything and he had several trees that were a few hundred years for sale at the time.
My tree was 13 years old at time of purchase in January, and he assured me it would live for a very long time given the right care. I attach a picture from the day of purchase below.

Yes, I know Crespi 名媛直播 and their 1000 yo. Ficus (not been there, but they are well known).

Typical symmetrical S-shape, branch left, branch right, branch left... there are hundreds of thousands of those.
Not exaggerating. Check and see the number of pieces for a minimum order.
Yes, bonsai sellers sell these. People buy them... they have to make a living too. Of people buying highly priced, old and expensive bonsai there are probably not enough to make a living.
Look at some bonsai images in Google images. You'll see a difference...

13 years? Sounds unlikely. I'd give it 7. The right care... is very difficult if it is indoors, in an indoor climate - low humidity, low light level, temperature all will be a problem.
If you must grow it indoors, try a ficus.

My conclusion:
Your plant is 7 - 8 years old, not older.
Not even sure if it is a Zelkova too. Could be an Ulmus (like the other two). I'd need a better picture of the leaves. Oh wait... that's going to be hard

Depends on your budget, the environment and the care that you can give it.
Again, I'd go for a local species and grow it outdoors. You could try and grow your own (which will take many years).
A question that keeps bugging me: why did you ask advice here, why did you not ask Crespi?
