I do not know why that is relevant, but estimating the age is hardly possible as no one knows how it is grown, how long it has been in that pot, how it was taken care for...
I have a 20 year old elm that could pass for a 5 year old. It was neglected for many years and hardly grew before I picked this hobby up again.

Is it possible to carve deadwood with manual tools ?
And in any case which shape would be looking natural?

It doesn't matter.
Fact is, in China, bonsai exporters cut branches, thick roots, air layers, or graft from old trees to make "instant bonsai", and usually the labels show the age of the original tree.
Auk was saying exactly that in other words.
