Hard to tell for sure but the trunks look a bit chunky and would have ugly hacked off tops.
I would suggest looking in google images for olive bonsai.
Look up how to heal the ugly tops or cover up with clever branching.
Get some inspiration and go for it.
Find something that has a similar branch style.
Put a pic of yours at that same angle then use paint to sketch on your goal look.
Might want to look up how they grow branches very important to know how to control the trees growth.

Keep looking them up and find one that you like and make your Owen version of it with what you have, you could almost make a raft style with it and make it look like multiple trees growing out. As for the ugly cuts find a good branch to make a new apex out of and cut at an angle next to it, add cut paste and it should heal nicer.

They are also probably 100 years older. It needs to grow first.

How do I make the leaves grow smaller?
It seems not in proportion to the trunk

The best time for heavy pruning on most trees is in early spring, olives I'm not 100% sure on. With making the leafs smaller you can partially defoleat the tree and in a few weeks new growth will emerge with smaller leafs and inter nodes, but with all work to be done make sure the tree is Healthy first.

I keep looking online for ideas But It seems impossible to me to even remotely style my tree like one posted on various bonsai forums or on google.
I'm completely lost... where do I even begin my work, on what part?
The tree is healthy as far as i know

You probably have to reduce the number of mains on this plant. Olives take a very havy cutback with an abundance of new growth. It depends a little on how far you are in the season. If you stil have at least 3 months of active growing left in the year, you could consider it for this year. Else, you could reduce one or two of the branches, leaves the rest. And in spring trim the rest to where you want it.
Leaf size is nothing to worry about now. The plant needs to be in a much more mature stage.
