Acer Palmatum, Ilex and Ulmus

Hi, I recently acquired three new trees; an Acer Palmatum (assuming Deshojo, but not 100% sure), an Ilex Serata and an Ulmus Parfivola.
Currently the soil they have isn't that great but seen as winter is coming I would rather let them be for now and repot early spring.
I'm still unsure if I should do anything else besides repotting them in the spring and letting them settle and grow for a year.
I already like the general shape of the Ilex so I definitely wouldn't do any hard pruning on that one, but the Acer and Ulmus are a different story.
As you can see the Ulmus has the now typical curvy s shape. So I'm thinking I'd like to give this a try:
For the Acer, and this is the main reason I'm made this topic, I can't really decide on which of the side branches I want to keep. If any at all?
I'd really appreciate your input on this one...
