Do you this would make a good bonsai? Its used as a fence (shrub) in southern sweden, its botanical name is Prunus laurocerasus ,pretty hardy it would say. But how do i cut it and how far do i get root-wise because the owner is having a hard time getting the whole root ball out. Advice is much appreciated

A prunus is not a maple but a cherry .
This species has large leaves that will not reduce much.
A good way to try and find if a tree will make good bonsai is googling for images, so "prunus laurocerasus bonsai". You won't find good ones.

In Germany yu see these a lot. In gardens. Not as bonsai. I removed a few large trunks from my garden in the past. I did not keep them for bonsai as I do not think they will make a pleasing tree. But if you have the space, time and plant.. Try
