I assume you mean old wood. It depends on if there are any buds. If this is a Crab Apple then it may do.

Apples sprout everywhere when trimmed back. Just be carefull, many apples are grafted.

First find out what type of apple you have. A cultivated edible? A crapapple? Then decide whether you think it is grafted. After that look at trimming.
