I'm writing, because I've just buy this new acer bonsai,
This is a 17 years old bonsai, and for me is very beautiful.
Can you suggest to me what can I do with her, to help me to get a better look, also if I can try to defoliate the foliage. Or if I have to cut any branch?
Any suggest would be helpful. About the fertilizer, where I have to give it to her?

I dont think the image helps him. You can not see most of the trunk and branch structure/ramificcation because of the foliage.
Anyways if op would like to improve his tree as he mentioned, I would suggest to join a bonsai club nearby. Read a lot about bonsai art itself, basic care, and go on to articles about creating taper in trunk and brach development.

Looking at the tree, I think you might do well in the long run, if you would pot it in a pot that is a few cm larger all around, and specifically, deeper. If you plant the tree deeper, you might get some more roots along the nebari, which could help (Altough that is hard to tell from the picture)., Then let is grow strongly for the rest oof the year. In winter trim backlong branches Next year you should then get lots of young branches deeper in the tree.. That you can use to start develope the crown. At the moment it is a little open and boring.
Best advice was however already given: Do also find a local club/enthusiast to discuss the tree with. In reall ife it is much easier to judge the options than from a picture. And direct interaction works much better to learn than just from forum posts.

I'm thinking even on de-fogliate the tree so the leaves will be smaller. Any suggestion about this?

Decreasing leaf size is not a good idea yet, you need to grow/strengthen and later wire some branches. You will need as much foliage as possible to make branches grow and thicken up.
After a few years you can start to think about leaf size

Nope. Do not defoliate. As before, I would really focus on getting the plant as strong as pssible, then do any trimming, and cleaning the wounds. This will take a year or two. After that you can work on branches. I think if you really want to persue this project you should take it to your local bonsai nurserys and see if they will help you start the tree again to create somthing you will enjoy. It will take it a long time but as a fun project im sure something can be done.
