I think the most common trees that are advised for beginners are juniper and Japanese maples.

Any outdoor tree that is suitable for bonsai and is native to, or is known to do well in your region.

If you are asking what bonsai are best for beginners:
Anything cheap, that is suitable for outdoors in your region and that is not a Ficus Ginseng, a species that is not so suitable for bonsai, or that has no potential to become a reasonably good bonsai.

Depends on your climate

Well, I suppose you are in Cape Town, SA.
Climate there is similar to where I am, south of Brazil, so you have a wide array of trees to chose for, tropical or temperate.
Go for the ones that are native or well adapted to your region. Ficus Retusa and Chinese Elm are easy to start with.
