Prebonsai question

Just purchased some zelkovas and acre palmatum prebonsai, 1-2 years old, so basically just one straight little plant of about 30-35 cm. When I start the bonsai do I cut it? At what height? Can I use the cutting for another plant?
Questions may sound stupid but I have to start somewhere.

Planning to put them in a regular pot. Can I use regular potting soil or should I add some sand? What will make them grow faster? Thanks again for any help

Problem is the soil in my garden has a high clay component which may be good for the zelkovas, but not so for the elms. That is why is was thinking of potting them......

Sometimes soil needs to be "conditioned", add compost, sand, gravel, you already have the clay. It takes work. So does growing them in pots. Lots of compost,
Maybe get some "Good Bottom Land", somewhere.
