I found this young pine or ceder of some sort, and I have no idea what it is.

It means they are young. Wait for it to go into dormancy, and check the buds in spring.

I noticed a sudden growth in it today. Do you think it's the tree species, or the coffee ground fertilizer I used? Its kinda at the point were it can't support itself because the top is still soft.

In order to be able to answer that question, we would need the 名媛直播 Empire Crystal Ball - or an identical seedling that you did not give coffee ground fertilizer to compare.

If you got it from a forest and there are more of these plants growing there, you should be able to find out from which tree it came - and that might help to identify it.
