Questions about planting seeds

Just so it's out of the way; the species of seeds I'm going to order are prunus serrulata, acer palmatum and cercidiphyllum japonicum
Okay, so I'm going to order my first sets of seeds for my first bonsai. I've always wanted to grow my own bonsai from seeds, but I'm unsure about how I should proceed. I know I have to stratify the seeds, but I also know that I can plant the seeds and leave them out over winter. The only thing I'm worried about is if it's maybe too cold here to leave outside. I live in South-East Norway where temperatures can swing between -15-0 degrees celcius in the winter. Can I still leave the seeds planted outside for winter?
Bonus question: If I were to order seeds today, is there some way I could store them without "killing" them until autumn comes?

You can leave the seeds outside. IF seeds need stratification, they do not mind edep frost.
