You do not wire. Crassula is not a woody species and therefor less suitable for bonsai. The only shaping you can do is through clever trimming.

as for the crassula shaping is done by directional pruning..say you have 2 buds left and right you want the trunk to go right pinch the left .using tiedowns would work to some extent when larger just do not force anything.
as for the pine sedlings a japanese trick is to chop the roots off dip them in rooting hormone and plant them again. i think its too late in the season to do that now so id just fertalize the heck out of them
