As far as I can find It's a very hardy shrub. It doesn't seem to be very picky about soil but having nice well drained loamy soil would be the safest thing to do.
Although I couldn't find a picture of you exact species I found one that's very close. Here:http://www.superstock.com/stock-photography/Cotoneaster+Skogholm
I found a good link to bosai root trimming:http://www.ehow.com/how_2054683_trim-bonsai-root-systems.html
As for trimming the branches, this species is pretty vigorous so pruning shouldn't be too damaging to it. I would prune to the shape of the picture I have a link to.
Wiring info can be found on this website.

I have a cotoneaster as well.
From my experience thus far these trees are bulletproof.
Any basic fast draining bonsai soil mix will work just fine. I keep mine in full sun all day and it seems to love it. I usually end up watering it every 1 to 2 days. Mine is a shohin and in a tiny pot, so you might need to water less if its in a larger pot. Cotoneasters can take very hard pruning without any worries. Its definitely a stress free tree.
I have not repotted mine yet, but it should be standard procedure. Repot it in early spring if ya can.
