Does anyone have a Coffee Plant? I have one coming in from an online nursery next week and I would like to know how they are.

I would suggest that you read up on species before you order, not after.
I tried to grow Coffee plant several years ago and failed. They are sold quite often around here and I know many that have tried, but none that has succeded.
Coffee grows in very specific conditions. Highland humid tropical conditions in acidic soils. You need to mimic these conditions in order to succed. I have tried in lowland terrarium, it does not work.
The conditions I think is the most important to focus on is humidity, night drop in temperature and extreamly much light. But I cannot say for sure.

I did read up on it. Along with the soil, etc, which I already have on hand.

For over a decade I have had a coffee tree but just as ornamental. The species has very large leaves and is somewhat reluctant to create side-branches. The whole growth habit in combination with the size needed to create a realistic image made me decide to not grow one as a bonsai.
Would be interesting to see how you fair. However, from my side the recommendation would be to just grow ith as an ornamental, rather than try to make it into bonsai.
