Trees need the same care before, during and after the vacation.
Trees with less foliage demends less watering, so if appropriate timing, prune or defoliate if needed to do anyway. Do not prune just for the sake of vaccation.
Trees kept cold and shady demands a lot less watering as well. So I prefer to to go on vaccation in winter when less care is required. The trees can be left alone for up to a month. If I go in summer it is maximum 4 days and I always have someone trustable watering daily.
