Reviving a Fukien Tree

A co-worker has a Fukien tree at work. It has been there for over two years, and was very happy. She went on an LOA and it wasn't watered for a few weeks. I had started restarting it slowly in an effort to revive it and the drying out had stopped. Then two other co-workers decided to work an undisclosed amount of coffee grounds around the roots. They tore the tap roots in doing so and they were uncertain as to the exact quantity of grounds they put in the pot (maybe two tablespoons worth in a shallow 6x3 pot.). At this point, the tree looks worse than ever. Is there anything that can be done? I was going to scrape the coffee grounds off of the soil until I found out they mixed it into it. What if anything can be done to save it or should I just buy my co-worker a new tree? Thank you for your time.

Coffeegrounds in itself are no issue. Not watering a few weeks is an issue, which probably caused the demise of the main roots.
