Adding to what leatherback said, I have had several trees drop all their leaves for no discernible reason. This spring my wisteria budded out, looked great, and all the leaves fell off. I have no idea why. It is back full force now. All I did was water it.
In June an elm crisped up all its leaves. It was one of a dozen I have that have grown from seeds. The rest did fine, just this one appeared to die. A week later buds came out, and now I can't tell which one it was in the rest or them. All I did was water it. Once the leaves were out I started fertilizing.
Repeat the story last year with the olive.
Keep ti watered and in sunlight but not too hard direct sun until the leaves get a chance to harden up.

Get it out right now. Normally the recomendation is to move slowly from shade to full sun. But that is to avoid scorcing of the leafs. This one can go straight out to full sun. Keep it well watered.
I think Edingburgh have near to perfect climate for chinese elm. Humid and mild? The only situation you need to watch out for is proboably those sunny days with hard frost. I guess quite rare? If it happens move the tree into shade.
I agree with lb and im, the tree seems to have some life left and may recover now or in spring. Good luck.

I showered the bonsai on Wednesday and this is what the soil looks like. How often should I wanter, please? It still looks and feels pretty damp
