I have recently discovered that in my bonsai soil are a lot of tiny silver insects.

Springtails from the genus collembola. No threat to your plant but an indicator of overwatetering.

Actually I unfortunately underwatered this plant and it hasn't been watered for 3 weeks and after that I pour water until it runs out of the drainage holes, a thing that I didn't practice before.

It depends where you are and what the climate is like. But three weeks without watering this time of the year is not long. The springtails like it a little bit more humid than what is good for the tree in the long run. If you dont get massive amounts is not a big issue.

Three weeks actually turned out to be a long period of time because my plant has lost more than 80% of leaves.
No, they are a few and appear when I put the soil aside to verify if the soil is still wet or not.
