Hello, I am just starting my bonsai journey. I live in Yuma az. Have some native plants I am trying to turn into bonsai. But they will recover from being transplanted. What am I doing wrong?

Well, beeing a beginner starting to dig up plants is the only obvious I can find wrong in your text. Start with cheap garden center materials instead.

If you want to know exactly what went wrong you will need to give more information and some pictures.

Digging should be done in spring. If you dig something up, and cut roots, then you also must reduce the foillage to counter leaf transpiration.
What kind of issue are you encountering with the digged up plants? Got some pictures?

When you dig something up, pay attention to the taproot and to the little feeder roots that come off of it. If all the feeders are at the end of the taproot and you cut it off, you cut off the fine little feeders and the tree may struggle and probably die.
