Anything between 1-1000 years?

If you start with a tree that is not yet a bonsai, it will take years to train it as a bonsai. Obviously it'll take years to get anything bonsai like from a seed, but likewise, if you start from a mature tree and chop it to bonsai size, it'll take years to develop branch ramification etc. The only shortcut to success is to hike in the mountains, and find a naturally small tree that already is fully mature, or ancient if your are lucky. (Make sure you have permission to take it...) But, especially in the latter case, you will never find out how old the tree is, if that is what you want to know.

I second Persimon.

Some more factors to consider:

Your final design dictates to big extend how long to wait until you start working on it. Obviously a small bonsai takes less time than a big.

Trees grow at different speed in different climates and conditions. Many hardy trees that are imported to northern Europe are grown in Italy for this reason.

Trees that grow in the ground grows faster than the ones in big pots grows faster than the ones in small pots.
