Help me with seed sowing was created by Dedekind

Hello

I am very new to the bonsai world and have received a very nice gift which is a bonsai planting kit, with seeds for 5 trees. There are some sowing instructions (soak in water 24 hs then sow in pots etc), and an extra separate piece of information: store the seeds in the refrigerator with a bit of moisture until late winter or early spring. My question is: do I need to do this or I can just sow in the pots now? I understand the reason for the refrigeration: emulate winter conditions. But surely we are already in winter and this is unnecessary?

By the way all the seeds are for temperate climate trees which is my local climate (UK).

Thanks

Hello and welcome.
First things first: you do understand that out of your seeds will grow normal trees, not bonsai?
Second: good thinking, just plant them in a pot, place them outside and forget about them untill spring when they ( and all other seeds in nature) naturally sprout.
Don't be disappointed if none of your seeds sprout. These bonsai grow kits are a scam really, you never know which seed is in and/or how old it is. Btw, in nature only a small percentage of the seeds sprout/make it to become a tree, hence the thousands of seeds a tree produces.
If you are really interested in bonsai, i suggest you start with a more mature (pre-)bonsai, if your seeds sprout it will take decades to become a bonsai ( if given the proper care and techniques)
