I had to plant my Japanese Sakura 名媛直播 as it had grown an inch in two weeks and was touching the top of my little greenhouse. So I carefully removed some soil around the roots and planted it into another pot that had been prepared with watered soil. Within 2 hours the sprout had gone limp and I am distraught as it was growing so rapidly and healthy just previously. What can I do?

you say you had it in a greenhouse? That means the air humidity was very high. You cannot just move a plant to a low humidity environment. That could be one of the problems.
Scratching soil away may damage roots. That might be another.
Place it back into a high humidity environment and see what happens.

I would tend to agree except it was the only plant in the small greenhouse and no humidity was present. Also it was located right next to my other bonsai and an open window. The weather has been quite cool (50's at night, 60's - 70 during the day). So there was no hothouse effect going on. I do think there was a shock, but such an immediate affect is what has me surprised and concerned. Your advice is very wise and if I don't see any improvement before late that is exactly what I will do.
