Collect the moss from a place as near you as possible. Pavement and concrete moss are better than moss growing on trees.
Wash it down. Some people cut only the top of the fresh moss with bonsai shears and mix it with sphagnum moss.
Apply gently but firmly on top of your top soil. An organic top soil is usually faster.
Make sure your top soil doesn't move.
Don't cover the whole top, leave some spaces so water can penetrate easily.
Wait for it to take, can be one whole year.
In the summer it usually turns brown.

I often scout roadside walls when walking around in my mountains’ woods here: I bring a ziplock bag with me to keep it moist throughout the day.
Get as many different shapes and colors as possible, then move them to trays with pumice and organic soil for a couple of months, just in case I moved some nasty insect with it...

Probably worth adding that some mosses (and lichens) can be incredibly rare and location specific. Try to stick to species you can identify and as with everything from the wild, use common sense if you decide to take some.

.....And make sure you dont break any laws. In my Country it is strictly forbidden to collect moss from nature. And forbidden to collect in Town without permission of the property owner.

Similar here if you step out of the road in the actual forest.
Thankfully not so for the road itself, as long as it’s open to public transit and there are no explicit signs.

MOSS (from Google)
If you want to grow sheets of moss, let your parent moss dry out (bone dry) and then put it in a blender with soft/rain water. Once you have what looks like muddy water, you can sprinkle it over growth media. I do not sprinkle it on my bonsai because I find that it grows an impenetrable sheet. Instead I grow moss separately and move it over to bonsai in pieces and chunks.
