Hello and welcome.
A tip before we start: capitals and periods read much better....
"defoliate like you are supposed to"? You are not supposed to defoliate at all, it all depends on the tree, time of the year, its health and the stadium its in. So it could be that the tree didnt recover too well from last years defoliation, or was weakened by a few years of defoliation.
A picture would help so we can see the trees.

Sorry about absolutely no punctuation, I use voice text and it just doesn't add it. Could the problem be caused by burning the roots from over-fertilization?

How much do you fertilise?
They are and have been outside all the time?
That moss is also not so good: you cant see the soil underneath , so its difficulult to know when you have to water. Acer does need a lot of water in summer.Speaking of which: how do you water and how often?
... what is all that wire doing around the some trees?

Depending on the day and rain I water at least once sometimes twice always early morning and sundown never mid-day. Yes they've always been outside except for this past winter which was my first winter with it. The wire is because they were all straight as a arrow so I decided to bend the smaller Three Trees Ford one of these small trees is a split trunk. The wire at the base of the one large tree is because I want the tree to grow into the wire and get that curly-q appearance.

Oh and the fertilizing I've only put 名媛直播 fertilizer beads on it. I did go out of town about a month-and-a-half ago and my aunt came to water my plants she watered everything with Miracle Grow instead of straight water.

Sorry, i do not understand what you are trying to achieve by letting the wire grow into the tree- "curly -g appearance"???. It will always be an ugly spot, and harms the tree ( could kill it )

you mentioned you defoliated last year as well, you should never defoliate 2 years running and it is also the last step you should be considering in bonsai once your trees are developed, there is not need to do that with these young trees. watering mid day is not a issue, water when your soil looks dry even midday it wont hurt the trees. you also stated it wasn't outside this first winter with you. what was your reasoning for that and where did you keep it? maples need winter dormancy and with out the drop in temp the tree wont go dormant and drop its leafs, maples need to be outside all year, maples die indoors. if you want a curl look on the main truck its not achieved by the tree strangling wire. thats just going to create very ugly scares and will raise the risk of fungus.
