I need help about olea bonsai

Today i bought a new olea bonsai. But bonsai's trunk is approximately 50 cm. i wanna shorten it.
i am from turkey and the weather is cold in this days.
I will be happy if you are help about this and other care things.

Not really. You bought an olea.
As you bought it just one day ago, just leave it be. Make sure it is happy and let it grow. If you are certain it is doing verywell, then start thinking about how to shape it. Take your time. Read about it. There's no rush, you have more than enough time to learn about olea and how to create bonsai.

It is not possible to teach you how to create a bonsai in a few posts on this forum.
First, look up how to care for olea trees.

Then, start looking at bonsai and what they look like. Then learn to understand why bonsai look like they do - miniature trees. Your tree is probably not a great choice as a first tree for bonsai.
Notice your tree belongs outdoors. I guess that's not a problem in your climate?

i decided wait until it's trunk fatter.(maybe one year)
I postpone the shortening it.

You seem to be worried about the tree out in the cold, but I think in your climate, olive trees grow outdoors and survive hundreds (even a thousand?) years despite harsh winters. Probably your balcony is not even as cold as some places where olive trees naturally grow...
