I have one, but it is just for fun. Not aiming at a bonsai. There are much better species to be had.

Every time you cut a top it Will sprout two or three new branches, creating ramification.
Yes, if your care is like bonsai. The leaves are never getting as small as wanted. However, stay on the dry side most of the time, be careful with fertilizer and give as much sun as possible. Then the leaves will get smaller.
Yes, it is not likelly to be called bonsai by the purists. For that you will need cred in the community. But it Will for sure grow you an interesting miniature tree.

I have prunned back to where there are no leaves a times on my plants. Most of the cases recover and sprout 2-3 new stems from the top. However, that kind of severe prunning is allways a risk. It is your tree and you have to make the descition yourself if it is worth the chanse.
Sometimes it is better to keep the two lowest leaves, less risk. It will sprout just above them. And when the new branches is strong you can just rip them off.
