Beginner Tea Olive Trunk Chop

Hi, new to the forums and bonsai in general. I've read quite a bit and still have some questions. I have a tea olive tree that I've attached pictures of. I'd like to chop it down to the trunk to get it to taper, but I'm not quite sure where to cut and what to do afterwards. Also, would the rest of the tree be a waste or could I replant the rest and have it keep growing?

I do not think this plant is very suitable for bonsai
