I don't have much experience, when bonsai is small, should I shape them with frames and bend them when young? I'm afraid they will die

"young bonsai".. I think you mean that you have seedlings or cuttings? They are just young plants.

In order to grow them into bonsai, there are many routes one could take. You can plant them in the ground, forget about them for 5 years. Then cut back a few cm tall. Forget for a few years, cut again and pot it up .
Or yu can shape it while your and thin, put it in a pot and over the next decade(s) grow it out, constantly pruning too thick branches.

And all varieties in between

It really is a personal choice,and a balance between the size of the scars in your tree and the speed at which you will get towards something bonsai-like.

Growing from very young is a slow process in any case, and not the easiest way to get started. I would recommend to also get a few older plants that you can prune down to a basic tree, and work on that. Else you will only be waiting for the plant to grow for most of the time.
