Which one? As said, there are countless varieties. I'm not even fully sure if yours is a dissectum. It's an Acer Palmatum. Does it matter that much what the exact species is? If you must know, do what LB said and ask the vendor.

This is the 'wild' species. Acer palmatum. The type it all started from.

That would be an Acer Palmatum 'Palmatum', I guess. It does look what I'd expect it to look like.
Strangely though, I actually do have one in my garden. Purchased it at Esveld - who I would think - and was sold as the mother of all Palmatum varieties. It looks very different, more like a dissectum, so I'm not sure if mine really is a Palmatum 'palmatum'. I'll make a picture later.
