Thank you for reading! Im new and I just picked up this jade. I've resoild it and trimmed roots. But now I'm too afraid to trim... What should my next step be?

Well, I would give it a light trim and wait for it to become used to it's new environment.

That video scares me... But from what I understand, I should make guys right above the first dode of where I want it to split. Is this correct? What if after cutting, im not left with any leaves?
