Dwarf cedar pruning question

Hello, I am sure that the answer to my question is on here somewhere but I honestly am short on time to look at the moment. So the basic facts:
1 I am new (the past two years) to bonsai and have a small tree I was told was a "dwarf cedar" that I thought would make a nice bonsai, so I bought it.
2 I have had the plant for about 10 months now, I bought it the end of last spring, then immediately repotted it into a training pot, did a light root trimming removing a couple roots that wrapped the trunk as well as some of the larger ones, I also removed several small branches from the main trunk(s).
3- I wanted to trim up and shape some of the remaining larger branches this summer but wasn't sure exactly where to cut them on a cedar. On a tree like a juniper or azalea it is somewhat more aparent to me where to make the cuts.
4- the green pot inside the larger cylinder pot is a lot smaller, aprox 1/3rd the size, the larger one is just for looks
How do I trim this tree if I just want to take volume off the branches not remove the whole branch?
How old approximately would you think this tree is? (I'm guessing around 4 years?)
Any suggestions on shaping the tree or knowledge I should know?
I have also attached pictures of a mystery tree that I am not sure of the species of, does anyone know what my mystery tree is?
