Pepper tree, dried out, over watered, scale, spider, repot drama. was created by frlrubett

Owned 名媛直播 for years and never had many issues until I went on holiday and trusted someone to water my Chinese Pepper. I have had the three for about 6 years.
When I returned the tree was completely dry, leaves falling off everywhere. Over the next few weeks I managed to nurse it back to life and there was loads of new shoots sprouting. Fertilized twice in the two weeks with specific bonsai chemical fertiliser (was this too much?) and placed tree under some artificial grow lamps to continue the recovery. Then noticed some spider webs and some scale on the bark so threated it twice with insecticide.
Then I was away for work for another three weeks leaving strict watering instructions for my new house sitter. Tree was looking OK when I left lots of new growth and I was hopeful. Came back and the soil was completely water logged, there was new shoots sprouting but the rest of the tree was wilting (not yellowing and dropping but wilting) and there was a big bald patch on the top.
After trying to dry it out over three days and the tree getting progressively worse decided to bite the bullet and repot. Figured either the soil was over fertilised or the tree had been overwatered, or as spring is approaching the tree needed a repot regardless. Took the tree out and the roots were a bit rotten about 5% but not too bad, I was surprised that there was lots of dead bits of root in the pot and not a huge root mass seeming as I had not repotted in three years. Fast forward to today which is seven days since the repot. The tree is completely wilted and I think all the leaves will eventually drop, the trunk is still green under the finger nail and the drainage seems ok. Have stuck to a strict watering routine as before letting soil dry a bit before adding more water in this time.
Never had this with a tree so am not sure what to do, expect wait it out and see what happens. Nothing in the trees environment has changed, the weather went from winter to spring conditions then back to winter but the tree is indoors and has never struggled with anything like this in the past. I am not sure if the tree is in shock from the dehydration then the drowning and then the repotting or something more sinister.
Any ideas? I have not done a repot to a sick tree before so is this continued sickness normal? Thanks!

This is the tree, usually the leaves are really upright and springey but the whole plant is drooping, then crisping and dropping.
The fertiliser I have used for years is "vitax bonsai feed". Double checked the mix, and I did correctly dilute it!
