While trimming some grass below a blue spruce in the yard i came across this young maple with an interesting trunk. I can't let it grow under the spruce any longer, but should i plant this in a training pot, or replant in a better location in the yard to allow it time to mature before considering it for yamadori?

I would try to replant it on the ground and wait for a thicker trunk.

I don't know your climate, but if it were under my Spruce, I would wait till fall and dig it up. Then replant it in a deep, wide pot, then put the pot in the ground. The pot will allow me to choose where or if I needed to move it in the spring. Put it in a shady spot and see what happens in the spring. But I would wait till the leaves fall off before digging it up.

I asked Tony TIckly essentially the same question. He said to leave them in the ground until the buds start to swell. It might be just as good to get a big shovel and get a big enough chunk of dirt to keep the roots undisturbed. I have tried that and never succeeded. I am going to leave my yamadoris in the ground until the buds start to swell in the spring.
