Chinese Elm not doing good

Hey guys, so I've been having this Chinese Elm for more than a year now and hes been doing great until lately, I noticed that some leaves are starting to change in color and when slightly touched they immediately fall off, also the new shoots and leaves seem to simply die off without even growing to maturity, I dont know what i'm doing wrong.
Maybe watering too much ?
I sink the entire pot into water for 10 minutes once a week, and then usually on wednesday ( each week ) I add fertilizer
He's getting plenty of sunshine where he's sitting right now, I don't know what I'm doing wrong

No, the usual for bonsai is every time the soil feels dry to the touch.
Sometimes in the summer we do water twice a day!
