I got this Flowering Quince (not sure if it's Chinese or Japanese quince) for Mother's day. Can't find a lot of information on care. Please advise.

I have both. This looks like a Japanese Quince.

the basic advice would be to keep it outdoors.
Quince is a very easy species, and as long as you do not drown it, do not let itdry out and do not move it between shaded and sunny spots too much, it should be fine with you.
Turning it into bonsai is a bit of a different story I am afraid.

Yes, it is.
The obvious option is to grow them as a clump bonsai, otherwise it will take a lot of time and efforts to make it great.
Like this one, for example:

That' gorgeous!
I'm afraid that mine might never look anything like that, especially since I just found out that, in my few days out of town, it got invaded by aphids, dried up a bit, and lost a bunch of leaves
But I suppose that's the post for another topic...
