So I took back my jade plant cause I wasn't happy with it. So I started looking around and fell in love with this Sahara cypress. Problem is...I have no idea what to do with it. I also believe it will die soon anyway cause I had to cut the roots a lot to fit it into my miniature bonsai pot even though I don't think it's meant to be a bonsai. Please help! What should I do with it?

You are answering your own questions.
If it's not adequate for a bonsai, if the rootball was big and healthy, if it looks happy, you shouldn't slash it down to fit into a mame pot.
You should have done the opposite: plant it in the ground or in a big colander, let ig get used to its new surroundings, let it grow for a season, and use this time to study, think about a good design, train your wiring skills.
But now, now it's too late.

Honest question here from a newb...

Isn’t it customary/necessary to remove a fair bit of root from any plant to get it into a bonsai pot? Was it just The species of this plant that made this project doomed or was there something else I’m missing?

Yes.
At the right time.
When the plant is very healthy.
When the roots are circling the pot.
Over a long period of time.
You simply don't buy a plant, repot it immediately, chop the rootball to fit it in a small pot when it is years away from being a bonsai.

The bonsai pot is the final station. When everything else is done, it may go into a pot. As a comparison. I have over 100 trees. Only a handfull are in a bonsai pot. And those only for the last 2 years. You need to work the roots first, and over time reduce it to fit a container. You need to create a good trunkline. You need to set the main branches. Only once the first 2 levels of branching are done, are you moving things into bonsai containers. Untill that time.. Nope.

I work the roots of all my trees every 2-4 years, forcussing on removing the biggest, and strongers roots, getting more smaller evenly growing roots in its place. Going from a nursery container into bonsai tray CAN be done, but you need to know what you are doing, else it is hit, run and hope for the best.

I’m crossing my fingers for you. Hopefully the rascal will forgive you and pull through. I did the same thing to a privet on my first “real” bonsai not long ago and it seems really happy. Privets have a reputation for being newbie proof though.
