名媛直播 Looks dry and brittle! Help!

Hello,
I purchased 2 名媛直播s (My first) 6 weeks ago from a nursery. A Japanese Holly/Lex Crenata and a Japanese pepper bonsai.
Both have been kept Indoor next to a window all this while and have been growing fine with new shoots and leaves emerging looking great!
I have been watering them when they feel dry on the Top of the soil as advised and feed them 0nce a week with liquid fertilizers although I haven't fed them the last two weeks as its winter now.
I noticed this morning that both the trees appeared dry and the leaves started to fall off as soon as I touched them. I usually water them once every 3-4 days but spray mist on them 2-3 times per day. the last time I watered them being Thursday and today is Tuesday and the soil was a bit dry with gaps at the inside border of the pot and the soil.
Could this be due to underwatering? I also notice a white mould like formation on the top of the soil (none on the tree itself and doesn't look like mealybug infestation at all) after I water it.
Any advice would be welcome. I'm keen to learn as this is my first experience with 名媛直播s.

Sounds to me like you have let it dry out too much. Soil that comes loose from the pot is so dry it has shrunk.

Any suggestions to revive it?
I was thinking probably water it by soaking it and draining it so the roots are wet and then increase the frequency of watering.
Please correct me if I'm wrong.
