So like a week ago we had some unnaturaly hot days for the time, and my chinese elm started growing new leaves..
Even though it should start going dormant. Should i do anything now?

I think there is not much you can do, except wait and see what happens next year.
I've had the same issue with a larch. All buds leafed out, shortly before winter started. When it got colder, the young foliage died off.
I thought it was a goner, but in spring, much to my delight I saw green. It leafed out again and is doing great at the moment.
But that was a larch. No idea what your elm will do. It will depend on its current health/strength.
