How often are you pruning? If the tree isnt growing there is no need to prune. Any maintenance should only be perform on healthy trees. Keeping these trees indoors is going to be hard. Pruning and wiring right now is going to make it worse.
These trees are mass produced they probably weren't healthy when you got them either. It is possible to keep them alive but in my opinion they are sold as a disposable home decoration.

There are two issues here.
First, dunking or drowning your plants is NOT the best way to water then if they are in a good bonsai soil. When you repot and need to get rid of all the air pockets, OK, but not every day.
Second, florists are NOT bonsaists. They care only about selling plants.
Please, you don't have to quote all the previous text, just the relevant part for your answer make sense.

Hey,
my trees were going really well at one point, however, I think I over pruned which is what a florist told me to cut back and strengthen the branches. So that's what was done and since then they look sad.
Thank you clicio I'm still trying to figure how this works
So are we saying that my trees are pointless and maybe start on another tree? If so which one?

I wouldn't say pointless. If I were you I'd leave them alone for a while. Just keep watering only as needed. Hopefully in a year's time they will be a lot more vigorous but you are going to need to wait until the trees tells you they are ready.

If you say they were growing well, you were doing something right at that time.
I would refrain from trimming & fertilizing untill the plants are growing well. Say, untill you have at least 5 cm of new growth on several branches.
Plants need the foliage to capture light. that is they source of energy. You re move leaves, you remove their energy source. A little like us getting rid of our food, and only eating vitamin pills. It will not keep us alive very long. Fertilizer are just building blocks. Without energy, they just pile up. So.. Wait for growth, and let the plants shoot.
Then, first post some pictures, wait for advice on whetyher or not to trim/fertilize.
