Well it obviously is not a bonsai. Looks like Ash to me but as I don't know where you are I may be way out. No looking again not sure

Thanks I'm in the northwest UK. Ash was what I had thought from research myself. If so how best to care for it? (It is in a pot atm but in a hole in ground)

Where did you get this?

If in bonsai trade as starter tree it most likely is zanthoxylum piperitum

It's leaves look most similar actually. It was bought from a local garden centre. If that's true that'll explain why it's struggling in the cold.

It definitely looks like an Ash (Chinese, not European)... I've got a little one myself

Well.. I keep it outside all year round (so no problem for you), full sun but partial shading in summer (I live in Italy).
Water thoroughly and frequently if in good draining soil... drooping leaves tell you when you’re late in watering.

I have repotted it in full akadama 2 years ago but, as you can see, I have not really shaped it yet.

Wiring is not recommended, the branches are stiff and do not bend easily: you should get the desidered shape through pruning.

I have never seen an ash tree styled as prebonsai in a nursery. I have seen these peppertrees by the hundreds in garden centres.

In fact I believe Mdeed's tree is actually a Chinese Ash, like mine (first picture).
Peppertree leaves (second picture) are more glossy and kind of "leathery"...
But indeed, as Leatherback writes, Peppertrees are sold by the thousands in garden centres, normally as indoor bonsais and, as such, bound for sure death...
