So I started from seed and wonder at what stage do I start cutting the wisteria as you can see in the picture a few of them have grown really well...
And when should I take them out of the Propagator Cover.

They are wisteria and Japanese black oak...
They will be indoors bonsai...
This is my first time so any pointers.

No pictures. But.. Cutting once your trunk is near the size you want. I am pretty sure it is not yet big enough.

I do not use propagators so I do not use covers..
Keeping them indoors will kill them in the next few months.

If you send photos we can provide more information. I agree with the comment above, I never keep them inside.

So you dont need to worry about any bonsai related activity at all. They will die indoors before they are big enough to be worked on.

Why that I heard many people having bonsai tree indoors?

Indoor bonsai is a myth. Unless you are willing to invest in climate control equipment, growing trees indoors just is not going to work. Some species of plants from the tropics accept our indoors environment. THose survive. However, for bonsai, the plants need to thrive as the things we do to plants are quite invasive.

Yes, a lot of people have bonsai indoors. Most of them dies, some of them just suffer for a long time. None of them ever gets to the refinment stage. Both wisteria and oak are decidious trees that need winter dormancy to survive.

This is the reason, they want to be without leaves a period in a year. You can't do that indoors.
If you want "indoor" tree's/plants, then find some easy to care tropicals that don't need dormancy to grow indoors.

About seedlings:

Let them grow for a long time.

I dug up some maple seedlings last year. By fall they looked very healthy and had grown well. In February temps jumped up to short sleeve range, leaves started to pop out, and I put them in pots, with standard mix soil. They all died.

I suspect weather was the issue because temps swung down below freezing then back up several times. Twice it reached 20F/-6C and then was back to 70/20 after a couple of days.

I am going to repeat the effort but this time wait two years and carry them all into the unheated garage when temps swing down again.
