After leavs falling of my Chinese elm I am now letting all the new shoots grow back. Wondering if anyone has any ideas on how to style them later?

Seriously, let it grow a lot and then, IF you are sure you know how and why, chop it down and start to build a good ramification.

As said, let it grow a while.
Look at it every day or so, and find a branch that just doesn't belong. When you are sure, cut it off. Repeat. When it looks right, stop.
Remember it is easy to cut off, but hard to cut on.
